    This is a summer weekend delight. You can roast or barbecue both ripe and unripe plantain. If you have a sweet tooth, you definitely want to go for the roasted ripe plantain. Add some tasty sauce and you will be wondering what you have been doing by not trying this Nigerian yummy recipe before now.

    • Eggs
    • Mixed bell peppers (green, yellow and red)
    • . 1 red onion
    • 1 scotch bonnet
    • 1 fresh tomatoes
    • Power Oil
    • Salt to taste
    • Stock cubes
    • All purpose seasoning
    • Vegetable
    • Step 1: Peel off the skin from your Plantain
    • Step 2: Mix egg with seasoning, grounded pepper and salt
    • Step 3: Rob the egg mixture slightly on the body of the plantain such that it forms a very thin layer on the plantain
    • Step 4: Place the plantain on your grill pan
    • Step 5: Glaze both sides with a drop and place in the grill for 25 minutes; make sure you constantly check check it and turn once one side is grilled
    • Step 6: Place your frying pan on fire, add Power oil, leave to heat up for 2 minutes on low heat, add the mixed peppers, onion, scotch bonnet, tomatoes and seasonings, vegetable fry
    • Step 7: Add the whisked egg into the fried mixture and continually stir by breaking them all into pieces. Once fried, drain the oil from the result and place in a bowl to cool down.
    • Step 8: Once the Plantain is grilled, place on a plate to cool down for 2 minutes, and then gently slice in the middle. Add the sauce from the frying pan and there you have it.
